Prawns – shelled and de veined – 1 kg

Mustard seeds – ½ tsp

Onion – 1 medium – julienned

Green chillies – 2-3 – slit

Curry Leaves – 8-10

Ginger garlic paste – 2 tsp

Turmeric Powder – ½ tsp

Coriander powder – 1 tsp

Red chilli powder – 2 tsp

Cumin Powder – ½ tsp

Coconut Milk – of 1 large coconut

Oil – 2 tbsp

Salt


Method

Heat oil in a pan. Add mustard seeds and allow them to crackle. Add curry leaves, green chillies and onion. Fry them well till onion turns golden brown. Add ginger garlic paste and saute it for another 2 mins. Mix in all the powders and sauté the masala for few more mins. Once the masala is fried well add in the coconut milk. And let it come to a boil. Now reduce the flame and cook it till the liquid reduces a bit and you get to see the golden creamy yellow curry . Add the prawns and cook till done. Add salt and check for seasoning. The final curry should be yellowish creamy curry. Serve hot with steamed rice.

ü  The amount of oil, salt, and spices can be varied according to your taste and eating habits. This measurement works well for me and my family.
