Ingredients

Methi Leaves (Fenugreek) – 2-3 bunches – washed and chopped
Peas – 1 cup
Rice – 1 cup soaked for 15 mins
Onion – 1 cut lengthwise
Ginger garlic paste – 1 tbsp
Tomato – 1 chopped
Turmeric powder – ½ tsp
Coriander Powder – 1 tsp
Red chilli powder – 2 tsp
Sambhar Powder – 1 tsp
Garam masala powder – ¾ tsp
Coconut paste – 2 tbsp
Oil – 4 tbsp
Water – 2 Cups
Salt


Method

Heat oil in a cooking pan. Add onion and saute till it turns golden brown. Add ginger garlic paste and saute it for a min. Add Methi leaves and fry them well. Add green peas and tomatoes. Saute till tomatoes get fried well. Mix in all the powders and fry for another 2 mins. Now add the coconut paste, soaked rice, water and salt. Check the seasoning. Close the cooker and let the rice cook up to 3 whistles. Serve hot with raitha.


My Notes
ü  You can replace red chilli powder with green chillies. I have tried and it tastes good

ü  You can mix in other veggies also like beans, potato, and cauliflower and make it healthier.

ü  If you do not like adding chopped tomatoes, it can even be pureed along with coconut and added at the end. But make sure you do not fry the coconut paste for long or the taste would change.

ü  The amount of oil, salt, and spice can be varied according to your taste and eating habits. This measurement works well for me and my family.
