Simple Tomato Gojju/Gravy

Onion – 1 medium size – chopped
Tomato – 1 medium size – chopped
Mustard seeds – 1/2 tsp
Curry leaves – 6-8
Turmeric Powder – ½ tsp
Red Chilli Powder – 1-2 tsp
Coriander Powder – 1 tsp
Oil – 1 tbsp
Water as needed
Coriander leaves for garnishing.
Heat oil in a kadai. Add mustard seeds. Once it starts spluttering add curry leaves. Add onions and saute it till they turn translucent. Don’t fry it more as we should not lose the crunch of the onion pieces. Now add tomatoes, turmeric pwd, red chilli pwd, coriander pwd. Fry well. Add about half cup water and salt and cook till tomatoes become soft.Check for seasoning. You can add more water to get more gravy. Cook till you get the desired consistency. Garnish with coriander leaves.
