I made this kheer on Ganesha Chaturthi and it was a big hit. My mom used to make this at home and i had always loved it. But since a few years she had completely missed making it. I wanted to make some kheer which i had never made before for my family. And I remembered the same old carrot kheer that mom used to make. It turned out to be very tasty. Everyone loved it.




Ingredients

Carrots – 4 (skin scrapped) (i used small size carrots you can add only 2 if they are huge)
Ghee – 2 tsp
Cashews – 8 (broken into half)
Sugar – ¼ cup - approx (Adjust according to your taste)
Milk – 2 cups


Method

Boil the carrots up to 3 whistles in a pressure cooker. Once done, grind it into a fine paste. Do not add water.

Heat ghee in a non-stick pan. Add cashews and saute it till they turn golden brown. Keep it aside.


To the same pan add carrot paste and saute it till the raw smell goes. Add sugar and give it a mix till the sugar dissolves completely. Add milk and bring it into one boil. Reduce the flame and cook for another 2 mins. Add fried cashews. Take it off the heat. Cool it and refrigerate it. Serve chilled.


My Notes

ü  You can have this kheer even when it is warm but it tastes better when chilled.

ü  You can adjust the amount of sugar according to your taste.
