This simple recipe is taught to me by my hubby. He learnt it during his college days. I believe there was a mobile canteen close to his medical college where this canteen guy used to make yummy egg chilli in minutes. It was quite popular among the students. Once when he went to have the same egg chilli he happen to observe the process of making it. He then tried his version of it and it tasted delicious.So here it goes...



Ingredients

Boiled eggs – 4- cut into 4 parts
Mustard seeds – ½ tsp
Garlic cloves – 5-6 – crushed
Curry leaves – 1 sprig
Green chillies – 1-2- finely chopped
Onion- 1 medium – chopped
Tomato – 1 medium – chopped
Turmeric powder – ½ tsp
Red chilli powder – 2 tsp
Coriander powder – ½ tsp
Garam masala powder – ½ tsp
Salt
Oil – 2 tbsp
Lemon juice – 1 tsp
Coriander leaves for garnishing


Method

Heat oil in a non stick pan. Add mustard seeds and let it splutter. Add garlic and saute it till it turns golden brown. Add curry leaves and green chillies. Saute it. Add onion and saute it till it turns golden brown. Add tomatoes and fry it for 2-3 mins. Add salt, turmeric powder, red chilli powder, coriander powder and garam masala powder. Check for seasoning.  Cook it for another 1-2 mins. Add the egg pieces and give it a gentle mix. Squeeze in the lemon juice. Mix it and take off the heat. Garnish it with coriander leaves. Serve hot.
