Coconut Milk Panna Cotta with Mango Jelly

This classic Italian dessert is made from gelatine and cream with mild flavours of coconut milk. It can be served with berries, caramel, chocolate sauce or fruit coulis. Well i tried topping it with mango jelly and it was awesome. The below recipe that i have given is good enough to serve two people.
Ingredients
Jelly Crystals (Any flavour) - I used mango flavour.
Fresh Coconut milk – 1 cup
Fresh cream – 1 cup
Sugar – ¼ cup (You can modify this according to your taste)
Gelatin – 2 ¼ tsp
Method
To make the mango jelly, follow the instruction on the packet. We would need about 5-6 tbsp of jelly liquid. Pour this into molds and let it set in the freezer. It might take around 10 mins.
Soak gelatin in about 2-3 tbsp water and let it
dissolve completely.Once it is dissolved, microwave it for 30 secs. Keep it aside.
Now take a non stick pan and add coconut milk, fresh cream, sugar and gelatin liquid. Bring to a boil on medium heat. Take off the heat and keep stirring to make sure that there are no lumps.
Meanwhile check the molds if mango jelly has set. Pour the milk mixture on the jelly layer. Place the molds in the refrigerator to set. Once done, run a sharp knife on the edges and invert the molds to take out the dessert. Serve chilled

ü If there is any difficulty in un-molding the dessert just place the molds in a bowl of very hot water for a few secs and then try un-molding it again.
