I have made panna cotta with mango jelly in the past. This time i had grapes at home. I had used a ready made jelly crystals for the mango layer before. But this time i made it from scratch by using grape pulp.The result was yummy and awesome looking dessert. I just loved the wine colour of the grapes on the white colour of coconut milk.





Ingredients


For making grape layer

Grape pulp – I cup
Gelatin – 1 ½ tsp
Sugar – 2 tbsp (adjust according to the sweetness of the grapes)

For making the white layer

Fresh Coconut milk – 1 cup
Fresh cream – 1 cup
Sugar – ¼ cup (Adjust according to your taste)
Gelatin – 2 ¼ tsp


Method

For making grape layer

Grind the grapes with very little water and strain it to get the pulp. Keep it aside.


Soak gelatin in around 3 tbsp of water and let it dissolve completely. Once it is dissolved, heat it in a microwave for around 30 secs. Keep it aside.


Take a non-stick pan and add the grape pulp, sugar and gelatin liquid. Heat it on a medium flame and bring to a boil. Take it off the heat and pour it into molds  Leave it to set in freezer. It would take around 15 mins to set.

For making the white layer

Now soak the gelatin again required for the white layer in 5 tbsp of water. Then heat it in a microwave for 30 secs. Keep it aside

Now take a non stick pan and add coconut milk, fresh cream, sugar and gelatin liquid. Bring to a boil on medium heat. Take off the heat and keep stirring to make sure that there are no lumps.


Meanwhile check the molds if grape layer has set. Pour the milk mixture on the grape layer. Place the molds in the refrigerator to set. Once done, run a sharp knife on the edges and invert the molds to take out the dessert. Serve chilled


My Notes

ü  When you heat the gelatin it should be in a liquid state with no lumps. That is when it will get blended well with other liquids.

ü  While un-molding the dessert once you run a sharp knife on the edges give it a good shake so that it detaches from the edges.

ü  Do not pour the milk mixture before the grape layer has set or both the layers will get mixed.

ü  If you are using transparent glasses as molds you can invert both the layers and set the grape layer on top. By doing so you will not have to un-mold it and you serve it directly.
